In summer, tall and bold spikes of white flowers appear high above the foliage. This kind of edible has been known to do very well in the Pacific Northwest! Be sure to not harvest the stalks until the second year and divide the root crowns every 4-5 years. The Crimson Red Rhubarb can be planted in beds, borders and containers. Keep in mind, the leaves are highly toxic. They should be removed and discarded before the stalks are used in cooking.
